gosh.
i love a delicious handmade treat. there's just something so fabulous about enjoying food that someone has hand baked. hand made.
but i'm a terrible baker. poor family rikrak.
i like to hapzaradly substitute wherever needed in recipes. and sadly, baking doesn't seem to love this approach.
so of course i superadmire the great chefs, superbakers among us. those great folks handmaking yummy good foods. one is the fabulous eco-artist five forty (read on to see how to WIN one of her amazing recycled rugs!) ... her yummy blog is filled with tantalizing recipes for all occssions, and i adore each and every one i've tried. (don't worry, nicies - i stick right to her directions!)
so i asked the lovely pegg to launch our earth week festivities with a scrumptious recipe for all of us to celebrate spring! hope you'll enjoy this mouth-watering delight: yummy strawberry scones.

Strawberry Scones Recipe
by five forty
by five forty
4 1/2 cups unbleached flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 lb. cold butter cut into 1/4” pieces ( you can use olive oil instead of butter if you do not eat dairy)
1 1/4 cup buttermilk ( use soy milk, rice milk... With a squeeze of lemon if you do not eat dairy)
2 cups hulled and chopped fresh strawberries
1/2 cup white chocolate chips ( again if you do not eat dairy, substitute carob chips for the chocolate)
1/2 cup chocolate chips
1 Preheat oven to 400 F.
2 Lightly grease 2 baking sheets and set aside.
3 Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.
4 Add the butter and cut it into the flour mixture using your fingers. Do not overwork the dough.
5 Add the strawberries and the chocolate chips and toss until well distributed in the bowl.
6 Add 1 cup of buttermilk and mix until just combined and the dough begins to stick together. Add the remaining buttermilk one tbsp. at a time if the dough is too dry.
7 Turn the dough onto a lightly floured surface and roll or pat into two 6” rounds, about 1 1/2” thick. Cut each round in half, then cut each half into 3 triangles and place on the baking sheets. Brush the tops with egg wash.
8 Bake 30 to 35 minutes, until golden brown and firm to the touch. Remove from the oven and serve immediately. Makes 1 dozen scones.

.... this gorgeous, red recycled felted wool sweater rag rug!! it was woven by pegg on an upright loom she adapted using wool for both warp and weft. therefore, it's an all recycled wool textile.
this rug measures 24 1/2" X 34" (62.2 cm x 86.3 cm), woven edge to woven edge, not including the wool fringe. pegg writes: "the rug is very cushy underfoot, it feels great. it's a gorgeous mix of rich beautiful reddish tones with stripes of grey, black and brown in the warp. Bright red, deep red, peachy red, coral, dark fuchsia pink...This rug can be dry cleaned, hand washed in room temperature water, or on the gentle cycle in a front loading washing machine, in warm water, no hot or cold. Please hang to dry or lay flat to dry. "

1/4 cup butter or margarine
2/3 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
TOPPING:
1 1/2 cups flaked coconut
1/2 cup packed brown sugar
5 tablespoons whipping cream
1 1/2 teaspoons vanilla extract
Directions
In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
Combine the flour, baking powder and salt; add to creamed mixture alternately with milk.
Pour into a greased 8-in. square baking pan. Bake at 350 degrees for 30 minutes or until a toothpick inserted near the center comes out clean.
Meanwhile, combine topping ingredients. Spread over warm cake. Broil 3-5 in. from the heat for 3-5 minutes or until golden brown.

ReplyDeleteLemon-Blueberry Muffins
Makes 1 dozen large muffins
3 cups unbleached all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
10 tablespoons unsalted butter softened
1 cup granulated sugar, less 1 tablespoon
1 teaspoon grated lemon zest
2 large eggs
1 1/2 cups plain low-fat yogurt
1 1/2 cups fresh blueberries (or frozen)
1 tablespoon unbleached all-purpose flour
Vegetable cooking spray or additional unsalted butter for muffin tins
1. Adjust oven rack to lower middle position and heat oven to 375 degrees. Mix flour, baking powder, baking soda, and salt in medium bowl; set aside.
2. Beat butter and sugar with electric mixer on medium-high speed until light and fluffy, about 2 minutes. Add lemon zest to butter-sugar mixture. Add eggs, one at a time, beating well after each addition. Beat in one-half of dry ingredients. Beat in one-third of yogurt. Beat in remaining dry ingredients in two batches, alternating with yogurt, until incorporated. Toss blueberries with 1 tablespoon flour and fold into finished batter.
3. Spray twelve-cup muffin tin with vegetable cooking spray or coat lightly with butter. Use large ice cream scoop to divide batter evenly among cups. Bake until muffins are golden brown, 25 to 30 minutes. Set on wire rack to cool slightly, about 5 minutes. Remove muffins from tin and serve warm.

My favorite recipe to share is rosemary garlic beer bread.

3 cups flour
1/3 cup brown sugar
3 tsp baking powder
1.5 tsp salt
2 Tbs garlic powder
2 tsp dried rosemary
12 oz. beer or hard cider
Mix all the dry ingredients together. Add the beer or cider, and stir well to get a sticky dough. Pour into a greased and floured loaf pan. Bake at 350 F for ~ 1 hour until done. Best served hot with butter.

ReplyDeleteHere is a recipe that I used at Christmas for peppermint candy cane meringues. It could be so easily adapted to seasons, tastes. I am thinking of changing out the peppermint for some lemon for my next go.

Chocolate Chip Cookie Ingredients
ReplyDelete• 3/4 cup sugar
• 3/4 cup packed brown sugar
• 1 cup butter, softened
• 2 large eggs,beaten
• 1 teaspoon vanilla extract
• 2 1/4 cups all-purpose flour
• 1 teaspoon baking soda
• 3/4 teaspoon salt
• 2 cups semisweet chocolate chips
• if desired, 1 cup chopped pecans, or chopped walnuts
Chocolate Chip Cookie Recipe Directions
Preheat oven to 375 degrees. Mix sugar, brown sugar, butter, vanilla and eggs in a large bowl by hand. Stir in flour, baking soda, and salt. The dough will be very stiff.
You can even use a Kitchen Aid mixer for this first step. I use the batter attachment and mix on a lower setting. Just be sure that the dough is well mixed before moving on.

Stir in chocolate chips by hand. You'll need to use a sturdy wooden spoon for this and a bit of muscle. You can add the pecans, or other nuts, at this time if desired. Keep stirring and folding the chocolate chips and nuts into the dough until they are evenly dispersed.

I love, love, love all of the rag rugs on the etsy site! They remind me so much of the rugs my great-grandmother used to have all over her home.
ReplyDeleteI love these pumpkin cookies that my friend Sundari shared with me:
ReplyDeletePumpkin Cookies
1/2 cup softened butter
1 1/2 cups sugar
1 egg
1 cup roasted pumpkin (or canned pumpkin)
1 tsp vanilla extract
2 1/2 cups all-purpose flour*
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ground nutmeg
1 tsp ground cinnamon
*I've been taught that, when baking at altitude, it's good to include a little extra flour so the cookies don't flatten when baked. When I tried this recipe the cookies tasted great, but were kind of flat. So, next time I'll add a little more flour.
1. Preheat oven to 350 degrees. Grease cookie sheets
2. In large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg, then stir in the pumpkin and vanilla. In a separate bowl combine the flour, baking powder, baking soda, salt, nutmeg and cinnamon. Gradually stir the flour mixture into the creamed mixture (do not overmix). Drop by teaspoonfuls onto the prepared cookie sheets.
3. Bake in the preheated oven until light brown, about 25 minutes.
